2005 vintage

2005, the year of all promises for the future. Winemaking process with strict control of temperatures (a new investment), which has allowed us to operate a low-temperature maceration before fermentation. Gentle tanins extraction from the very beginning of alcoholic fermentations, with a temperature maintained between 23 to 25°C throughout, in order to preserve softness and fruit. 


We have done everything to make the best use of this vintage, generally seen as exceptional. We will wait until spring or summer 2007 to submit it to your tasting.
